  • Whisk in the erythritol and vanilla extract until smooth.

  • You may either use this combination to make fat bombs or keep going to add additional seasoning. We chose to add 2 tbsp pureed strawberries and lemon zest to this recipe. To make ribbons, fold the paper in a certain way.

  • Allow the mixture to harden up in the freezer for 30 minutes.

  • When the fat bombs are solid, roll them into balls using a cookie scooper. Fill a cupcake silicone mold or a lined muffin pan with the batter.

  • To enable them to firm up correctly, place them in the freezer for 1-2 hours.

  • You may eat them plain or coat them in chocolate or crushed coconut.

  • Store in the freezer for up to 2 weeks in a ziploc bag. Remove them from the oven 10 minutes before you want to eat them to enable them to soften a little.

  • You may use Swerve or liquid stevia as your sweetener of choice. Just make sure you’re not using a granulated sweetener.
