This was the second keto cookie we made in the kitchen, and for the second time we struck gold… or should I say fudge?! These cookies are perfectly soft and cake like, with an ever lasting chocolatey taste. And, they are by far Matt’s favorite. To give you some insight, Matt will literally eat anything. He loves ANY dessert so long as it doesn’t have a weird smell. And, even with all possible keto desserts to choose from he has chosen these Keto Chocolate Fudge Cookies. If that doesn’t say it all than I don’t know what does!

The simplicity of these keto cookies is one of our favorites. With each bite, you’ll experience a delicately sweet, strong chocolate flavor thanks to some unsweetened coco powder. The combination of coco powder and almond flour creates a soft, chewy texture that’s perfect for dipping in coffee or almond milk, or setting out for Santa. You may also make mint chocolate cookies by mixing in some peppermint extract.
Chocolate Fudge Keto Cookies

Instructions:

In a mixing dish, combine cocoa powder and sifted confectioners sugar.

Using a hand mixer, blend the mixture with the melted butter.

Mix in the eggs, vanilla, and baking powder after they’ve been blended.

Now stir in the almond flour one last time. You should have a thick batter that can be readily molded with your hands.

Place on a prepared baking sheet and shape into cookies. After cooking, the cookies will retain their original shape. They don’t have a lot of room to expand.

Erythritol should be sprinkled over the tops of the cookies. (optional)

Preheat oven to 350°F and bake for 12-15 minutes. Allow to cool before serving. These are also delicious straight from the freezer. These can be stored in the freezer for up to two months!
