  • 1 pound of spaghetti squash (about 2 pounds)
  • 1 tablespoon extra virgin olive oil
  • a quarter teaspoon of salt
  • a sprinkle of black pepper, ground

Preheat oven to 400 degrees Fahrenheit. To make cleaning easier, line a baking sheet with parchment paper.

Invert the spaghetti and cut it in half lengthwise. Remove the seeds from the center of the pumpkin.

Apply olive oil, salt, and pepper to the insides of both half. Place the halves on the baking sheet, top side down.

Preheat oven to 350°F and bake for 35-45 minutes, or until crust is golden brown and cooked through. It’s done when the strands readily separate from the skin.
