I was recently asked to review a keto recipe book. It’s not that I hate carbs, it’s just that I’ve never found a keto recipe that I actually like. And then I came across the recipe for “Keto Quiche with Flaky Crust”. I’ve never made a quiche before, so I didn’t really know what to expect. Well, the old adage “the more you know” certainly rang true here!
Everyone grew up eating McDonald’s, so what better way to spice up breakfast than with a keto quiche prepared in the McGriddle style? While I grew up on McDonald’s orange juice, hash browns, and pancakes, Matt always got the McGriddle, and now that I’ve tried this dish, I feel like I’ve been missing out!

While preparing a quiche may seem simple, the aim with this keto quiche recipe is to get a smooth and creamy egg finish. The savory bacon and cheese, creamy eggs, and sweet, thick crust make this the ideal way to start any morning with the family. Follow the instructions below to make the ideal keto quiche in the McGriddle style!

In every recipe, a good foundation is essential, and this one asks for a delicious low-carb crust. A crust is required when attempting to make a healthier, tastier version of the McDonalds McGriddle. So we dug out our tried-and-true, sweet and thick low-carb pie crust and used it to create your new favorite keto dish! If you want to get ahead on this keto quiche, you can simply prepare the pie crust ahead of time and freeze it for up to a month or refrigerate it for up to three days. It just takes around 30 minutes!
To make the quiche filling, combine all of the ingredients in a mixing bowl.
Finding the proper ratio of egg to heavy cream is the secret to a great quiche filling, and I promise you’ll be surprised at what that ratio is. I initially believed that using more eggs would be the greatest option, but I’ve since realized that a larger part of the filling should be composed of heavy cream. This gives the filling a creamier, softer texture. A 4:1 ratio creates the ideal filling foundation without overwhelming the other components with egg taste.

All that’s left to do now is select your add-ins before we put it all together. Some people prefer to go all out, and I’m one of them, but we kept it basic with crumbled bacon and shredded cheddar cheese in our McGriddle replica. The slightly sweet crust and creamy filling, as well as the salty bacon and cheese, are all enhanced by keeping it simple. The ideal filling ratio is between two and three add-ins. McGriddle Style Keto Quiche

Preheat the oven to 375 degrees Fahrenheit.
Transfer the cold pie dough to your pie/tart pan between two pieces of parchment paper. Remove any extra crust and form it to the edges of the pan.
To prevent the crust from expanding, line the interior of the pie crust with a piece of parchment paper and fill to the edges with pie weights or use another oven safe pan/pot (as demonstrated in the video).
Bake for 15 minutes, or until the crust is light brown. Allow to cool after removing from the oven. Reduce the oven temperature to 350 degrees Fahrenheit.
In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper. Blend with a hand mixer until everything is thoroughly mixed.
In the bottom of the pie crust, layer the bacon and cheese, then pour the egg mixture on top.
If the edges are extremely exposed, cover them with foil or a pie crust shield, and bake for 40-45 minutes, or until a knife stabbed 2 inches from the edge comes out clean.
Although the center will be fixed, it will still be jiggly. Allow 10 minutes for cooling before cutting and serving.
Refrigerate for up to 5 days in a glass jar.
