These keto snickerdoodles are a classic favorite, and this healthy snickerdoodle cookie recipe is just as delicious when you use grain-free and sugar-free ingredients. They are tender, moist and thick, and the sweet cinnamon sugar glaze complements the rich, buttery flavor perfectly. Ingredients required:

Classic snickerdoodles are usually made with whole wheat flour, butter, granulated sugar (or brown sugar) and eggs. For our low-carb snickerdoodles, we used gluten-free and sugar-free ingredients, such as. B. :

  • High-quality almond flour
  • Coconut flour
  • Baking powder
  • Salt
  • Tartar
  • Solid clarified butter or solid refined organic coconut oil (texture should be similar to softened butter at room temperature).
  • Cashew Butter – You can also use your favorite nut or seed butter, but I find that cashew butter gives the best flavor to these low-carb snickerdoodles!

How to make cinnamon rolls keto

  1. Line a large baking sheet with parchment paper and set aside.
  2. MIX THE WET INGREDIENTS In a large bowl, beat the eggs with the almond butter, coconut oil or melted coconut oil, sugar-free maple syrup and vanilla until smooth.
  3. MIX THE DRY INGREDIENTS Add the almond flour, coconut flour, baking powder, salt and cream of tartar and mix until blended.
  4. OVEN HEATING: Preheat the oven and mix the icing sugar and cinnamon in a small bowl.
  5. SHAPED COOKIE DOUGH BALLS Roll the dough into tablespoon-sized balls and brush the balls with the sugar-cinnamon filling. Place them on a baking sheet, about 2.5 inches apart. Press slightly flat and sprinkle with cinnamon sugar if desired.
  6. Bake for 9-10 minutes or until lightly browned.
  7. Let cool on a baking sheet for at least 25 minutes to set. Otherwise the cookies will fall apart.

Can snickerdoodles be frozen properly?

Yes. Paleo Snickerdoodles can be stored in a freezer bag or container for up to 2 months. When you’re ready, remove them from the freezer and let them thaw or bake them in a preheated oven at 250 F for 5 to 10 minutes.

Can I make the gluten-free snickerdoodles in advance?

Absolutely. You can make the low-carb cinnamon cookie dough ahead of time, wrap it in plastic wrap and store it in the fridge for up to 3 days. When ready to bake, roll the dough into balls and brush them with the sugar and cinnamon mixture. You can also roll the dough into balls in advance, keep them in the fridge, and roll them in cinnamon sugar before baking.

How to store Keto Cinnamon Buns

  • 3 tablespoonsRoamy unsalted cashew butter or pecan butter (can also be substituted with creamy unsalted nut butter or seed oil of choice, but cashew or pecan butter give a better flavor profile)
  • 1/4 cupLacanto Sugar Free Maple Syrup OR Pure Maple Syrup for Paleo.
  • 1/2 tablespoon vanilla extract
  • 1 1/2 cups superfine blanchiertes Mandelmehl
  • 3 tablespoons coconut flour, sieved
  • 1/2 teaspoon baking soda
  • ½ teaspoon cream of tartar
