  • 2 medium eggplants, thinly cut into 1/4-inch circles
  • 1/4 cup extra virgin olive oil, split
  • 1 teaspoon powdered garlic

  • 2 tbsp extra virgin olive oil
  • 3 minced garlic cloves
  • 2 tbsp chopped fresh parsley

  • Heat the olive oil in a large pan over medium heat. Arrange the eggplant slices in a single layer on the baking sheet. Sauté eggplant in batches for 4-5 minutes on each side, or until softened and caramelized.

  • Continue cooking the remaining eggplant pieces, using extra oil or butter as required.

  • Transfer the sauteed eggplants to a serving plate and generously drizzle with Sauce with Garlic.

The serving size is 1/8 of the whole recipe, which yields around 5-6 slices.
