  • Butter or olive oil –Choose what you like best!  I prefer roasted vegetables with a little butter, but olive oil is excellent too.
  • Vegetables – red peppers, yellow peppers, onions, zucchini, broccoli are just some of my choices. You can use any leftover vegetables you have in the fridge. If you want to cook potatoes (not low-carb) and carrots, remember that they will take longer to cook.
  • Spices – Season this pan recipe with spices of your choice. I like to add salt, black pepper and Italian seasoning. You can also sprinkle the chicken with my homemade chicken seasoning, which is unmatched in the world.

  1. Preheat oven to 475 F. At this high temperature, vegetables and chicken cook faster and retain their color and texture.
  2. Arrange vegetables and chicken on a baking sheet, drizzle with olive oil and season well. Use a spatula to flip them over. You can also use your hands.
  3. Stir the vegetables halfway through so they are crisp on both sides.
